Spaghetti Squash and Green Beans

This yummy recipe is a delicious and satisfying fall favorite

and a great alternative to pasta.

I made it recently and couldn’t stop eating it!


  • Spaghetti squash 2-3lb
  • Water 1 cup
  • Green beans 1/2 lb
  • 2 Tablespoons butter
  • Salt to taste
  • Pepper to taste (optional)

Cut squash in half lengthwise and scrape out the seeds. Put squash, cut-side down in a baking dish. Add the water and bake for about 45 minutes or until you can easily insert the tip of a knife. Remove squash from oven and scrape out the stringy pulp with a fork. Put squash in a bowl and toss with butter.  Steam the beans for 4 to 5 minutes or until tender. Put in a bowl and toss with the remaining seasonings. Yield 4
